HOW TO PREPARE THE COOKED OCTOPUS WITH CARAMELIZED ONION RECIPE?
Ingredients
Ingredients for four people:
- 4 frozen cooked octopus tentacles from DISCEFA.
- 2 onions
- 50 gr of butter
- 1 teaspoon of brown sugar
- 1 red pepper
- 2 strips of bacon
- 2 large potatoes
- Tender sprouts for garnish
- Salt and pepper
- Extra virgin olive oil
Instructions
1. To prepare this recipe, thaw the cooked octopus. For this, you have two options (depending on the foresight and anticipation with which you can do it). The first option is to take it out of the freezer and put it in the refrigerator 24 hours in advance and wait for it to thaw. We recommend you to put a container underneath, since it is normal for it to leak a little water as it thaws. The second option is ideal if you have less time. You only have to immerse it in a container with water at room temperature, or put it under the tap for half an hour, and it will be ready.
2. Now it is time to prepare the potatoes. Peel them and put them in water to boil in a pot with a little salt. The time they should be boiling will depend on the size of the potatoes. If they are large, it will take about 20 minutes. In any case, to be sure that they are ready, use a fork or a knife to prick them and check them before taking them out.
3. While the potatoes are cooking, prepare the rest of the ingredients. For the caramelized onion to be perfect, the best is to cut it into thin strips. Cut the bacon in small cubes and the red peppers too, although not as thin as the onion.
4. The next step will be to take the onion that was cut previously and, in a frying pan, add a drizzle of oil and the butter. Before proceeding, wait until the mixture is completely melted and then add the onion. Fry it until it begins to soften, when you see that it is ready, add a teaspoon of sugar (preferably brown), and fry for a few minutes until the onion is toasted.
5. Once this step is done, in a frying pan, add a drizzle of olive oil and let it heat up over high heat. Add the diced bacon and sauté. It will not take long to be ready. In the same pan sauté the red pepper cut in small strips until tender. Set aside.
6.Next, clean the frying pan, add a drizzle of oil, and brown the cooked octopus for a few minutes on each side until it gets colored and is very hot. There is no exact time, it will depend on the color and texture that you like. As it is already cooked, it is only necessary to heat it and brown it on the grill.
7. Afterwards, do the same with the potatoes. Sear them for one minute on each side before cutting them into small slices so that they do not fall apart and acquire the expected texture.
8. The recipe is ready, plate it and enjoy! This recipe allows an endless number of different plating according to the taste of each chef and the style of each restaurant. Here we suggest one, but you can let your imagination run wild by preparing your own plating. The first step would be to place the potato, then place the octopus on top (you could even cut it into strips or chunks), the caramelized onion and sprinkle the pepper and bacon.
